While, milk & cookies are a definite no-no, I was comforted to discover other options. One of my favorites is this recipe for Banana Ice Cream. It's a crowd-pleaser because:
- It's delicious
- It's stupid-easy to make
- It's just like eating ice cream
- Do your best not to eat your bananas. Let them get a little black
- Chop them into pieces that will be more manageable for your food processor (or blender)
- Freeze
- Put in food processor
- Blend until the texture is like an ice cream
- Eat
The last time we tried this, we added half a vanilla bean to increase the flavor's complexity, but the effects were minimal. I would suggest a whole vanilla bean if you choose to go this route. Adding berries or other fruits are also a nice addition. Here's what the process looks like:
Great minds think alike...I JUST made some yummy banana based vanilla bean Ice Cream. Have you ever tried a date caramel sauce...wow, really helps overcome the strong banana flavor. Soak a few (6-8) medjool dates in 1/2 cup water(overnight)and blend, pour over your ice cream creation, great with a chopped pecan topping---reminds your taste buds of butter pecan!
ReplyDeleteI like to mix my frozen bananas with some coconut milk in the blender, and maybe a bit of vanilla or some cocoa powder. That makes it really creamy and a lot less sweet.

If you have a Champion juicer left over from your other-diet days, you can put the plate in (not the screen) and push pieces of frozen banana, pineapple, etc. through it and get AMAZINGLY textured, delightful pure fruit "ice cream." It is the exact texture of soft serve. I sometimes push a cube or two of frozen coconut milk through for the fat and tropical flavor. If there were no version of paleo ice cream, I would have to give up paleo. I don't think we ever lose the desire for cold and creamy.
